About Empirical Ayuuk
The smoky Pasilla Mixe chile is the sole botanical and the source of all the complexity in Ayuuk. One of the rarest chiles in the world, Empirical Spirits sources it directly from Mixe farmers in the mountains of Oaxaca, Mexico, and macerates it in a spirit made from Danish heritage purple wheat and pilsner malt. After distillation the best fractions are rested in a sherry Oloroso cask, allowing the flavors to infuse and mature with each other, giving a smooth, distinct and savory finish.

Founder Facts
Empirical Spirits calls itself a flavor company. Based in Copenhagen, Denmark, the small distillery was founded by Lars Williams and Mark Emil Hermansen. Williams formerly headed up The Nordic Food Lab, the experimental food research arm of Noma chef René Redzepi.
Building on an endless drive to experiment and discover, the team at Empirical is exploring new drink territory, using only natural ingredients, creating everything from scratch and innovating entirely new beverage categories.
